4 large apples (peeled, cored, and thinly sliced)
1 1/2 C. water or apple juice
4 T. sugar
1/2 t. ground cinnamon
4 T. cornstarch
4 T. cold water
2 t. butter or margarine
In a skillet combine apples, water, sugar, and cinnamon. Simmer, covered, until apples are just tender. In a small dish stir together cornstarch and cold water. Add to apple mixture. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Stir in butter. Keep warm. Makes 4 cups. Pour over puffy oven pancake.

Puffy Oven Pancake
1 cube butter or margarine
9 eggs
1 1/2 C. flour
1 1/2 C. milk
1/4 t. salt
Heat oven to 400 degrees. Slice the butter into a 13x9 glass pan and set aside. In a mixing bowl, beat the eggs. Add the remaining ingredients and mix well. When the oven is heated, place the pan in the oven and let the butter melt. Pour your batter in with the melted butter and bake for 20-25 minutes. Serve immediately with Apple Cinnamon Sauce.

Mom's homemeade waffles
2 C. flour
4 tsp baking powder
2 eggs
1 3/4 milk
4 Tbsp oil
Sift flour and baking powder together. Gradually add to wet ingredients. Spray waffle iron with non-stick cooking spray.

Cinnamon-Apple Pancakes
1 C. flour
1 T. brown sugar, packed
2 t. baking powder
1/2 t. salt
1 t. cinnamon
1/4 t. vanilla extract
1 egg, beaten
1 C. milk
2 T. oil
1/2 C. applesauce
Combine dry ingredients together in large mixing bowl. Make a well in the center and set aside. In a small mixing bowl, blend vanilla, egg, milk, and oil. Mix into the dry ingredients until just moistened. Add applesauce and mix well. Pour onto a hot, greased griddle. Cook until bubbly on surface. Flip and heat until golden on both sides.

1 C. milk (or 3 T. powdered milk and 1 C. water)
3/4 C. + 1 T. uncooked whole wheat
2 eggs (or 2 T. powdered eggs and 1/4 C. water)
2 t. baking powder
2 T. oil
2 T. honey or sugar
1/4 t. salt
Put milk and wheat into blender. Blend on the highest speed for 4-5 minutes or until batter is smooth. Add eggs, baking powder, honey, oil and salt. Blend on low until well mixed. Cook on hot non-stick or greased griddle.
