8-10 flour tortillas
1 lb. ground beef or turkey
1, 16 oz. can refried beans
1, 10 oz. can mild red enchilada sauce
1, 10 3/4 oz. can tomato soup
2 C. shredded cheddar cheese
Sour cream(optional)
Sliced olives(optional)
Shredded lettuce(optional)
Diced tomato(optional)
Preheat oven to 375 degrees. Brown and drain meat. Add refried beans and cook until heated through. Mix enchilada sauce and tomato soup in bowl. Pour about 1/3 of the sauce into the bottom of a 9x13 pan. Spread meat/bean mixture onto tortilla. Sprinkle a little cheese on top and roll up. Repeat until meat/bean mixture and tortillas are gone. Pour remaining sauce over the top. Sprinkle remaining cheese over the top. Bake uncovered for 30-35 minutes. If desired, serve with lettuce, tomato, olives, and sour cream.

Cinnamon-Apple Pancakes
1 C. flour
1 T. brown sugar, packed
2 t. baking powder
1/2 t. salt
1 t. cinnamon
1/4 t. vanilla extract
1 egg, beaten
1 C. milk
2 T. oil
1/2 C. applesauce
Combine dry ingredients together in large mixing bowl. Make a well in the center and set aside. In a small mixing bowl, blend vanilla, egg, milk, and oil. Mix into the dry ingredients until just moistened. Add applesauce and mix well. Pour onto a hot, greased griddle. Cook until bubbly on surface. Flip and heat until golden on both sides.

Blender Wheat Pancakes
1 C. milk (or 3 T. powdered milk and 1 C. water)
3/4 C. + 1 T. uncooked whole wheat
2 eggs (or 2 T. powdered eggs and 1/4 C. water)
2 t. baking powder

2 T. honey or sugar
1/4 t. salt
Put milk and wheat into blender. Blend on the highest speed for 4-5 minutes or until batter is smooth. Add eggs, baking powder, honey, oil and salt. Blend on low until well mixed. Cook on hot non-stick or greased griddle.

Preheat oven to 350 degrees. Mix all dry ingredients together in a small bowl, set aside. Mix all wet ingredients EXCEPT tomato sauce in a medium size bowl. Add dry ingredients to wet ingredients and mix well. Put into loaf pan and bake for 45 minutes. Pour tomato sauce over the top and bake 15 minutes more.

Green Bean Casserole
1 can cream of mushroom soup
1/2 C. milk
1/8 t. pepper
t. soy sauce
2 cans green beans, drained
1 1/2 C. french fried onions
Preheat oven to 350 degrees. Stir soup, milk, soy sauce, pepper, beans and 3/4 C. onions in a 2 quart casserole dish. Bake for 25 minutes, or until hot. Stir. Top with remaining onions. Bake for 5 minutes more.

1/2 C. chopped onion
2 cloves garlic, minced
2 T. margarine or butter
1/4 C. flour
1/2 t. oregano
1/4 t. salt
1/8 t. pepper
1 T. parsley
1/4 C. white cooking wine
Drain clams, reserving liquid from 1 can. Add enough milk to make 2 cups. In saucepan, cook onion and garlic in margarine until tender. Combine flour, oregano, salt, pepper, and parsley in small bowl. Stir flour mixture in with the onion and garlic. Add milk mixture all at once. Cook and stir until thickened and bubbly. Cook and stir 1 more minute. Stir in clams and wine. Heat through. Serve over your favorite pasta. Our favorite is angel hair.

PAPA JOHNS PIZZA
Being that every member in our family LOVES pizza, I was set on finding a homemade crust we all loved. In my search I also discovered you can get just about any copycat recipe for your favorite restaraunt dishes online(what a fabulous day and age we live in)! So, after trying Pizza Huts recipe and an artisan bakery's recipe, we all voted that we like this one best! I would have posted a picture but it was eaten before I thought about it. I'll post one the next time around! Also, keep in mind, this recipe only needs to be started about 1 hour before dinner time, maybe less!
PaPa Johns Pizza
Ingredients
2 1/2-3 cups flour
2 tablespoons sugar
2 1/4 teaspoons fast rising yeast (or fast rise, 1 envelope)
1/2 teaspoon salt
1 cup very warm water (120 to 130 degrees)
2 tablespoons oil
Directions
-In a large bowl, combine 1 cup flour, sugar, undissolved yeast, and salt; blend well.
-Gradually add water and oil to mixture. Blend at low speed until moistened, then beat for 2 minutes at medium speed. By hand, add 1 1/2 to 2 cupa flour until dough pulls away from sides of bowl.
-On floured surface, knead in 1/4 to 1/2 cup flour until dough is smooth and elastic. Cover loosely with plastic and let rest in a warm place for about 15 minutes.
-Press out dough onto (2) 12-inch pizza pans. Prick randomly with a fork. Let rest again in a warm place for 10-15 minutes.
-Brush crusts lightly with oil then prebake them in a 450 degree oven for 5 minutes.
-Top as desired, then bake again in 450 degree oven for 4-5 minutes, or until desired doneness.

1/4 cup water
1 teaspoon sugar
1 teaspoon olive oil
1/4 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon oregano
1/8 teaspoon basil
1/8 teaspoon thyme
1/8 teaspoon garlic powder
Directions
-Combine ingredients in a small saucepan over medium heat.
-Bring to a boil.
-Reduce heat and simmer for 15 to 20 minutes.

1 1/2 C. chicken, cooked and chopped
1 t. cumin
1/2 t. oregano
2/3 C. picante sauce
1 C. shredded cheddar cheese
2 green onions, chopped (optional)
6-8 flour tortillas
2 T. melted butter or margarine
toothpicks
Preheat oven to 350 degrees. Line a 9x13 pan with foil. Lightly grease the foil. Mix chicken, cumin, oregano, picante sauce, cheese, and onions. Place approximately 1/2 C. of the mixture in the center of tortilla. Fold and place seam side down in pan. Fasten with a toothpick if necessary. Brush with melted butter and bake for 35 min. or until browned. These freeze well.

2 chicken breasts, cooked and cut
4-6 medium potatoes, peeled and sliced
2 cans green beans, drained
White Sauce:
3 T. margarine
3 T. flour
1 t. salt
1/4 t. pepper
3/4 t. dry mustard
1 1/2 C. milk
3/4 C. mayonnaise
Preheat oven to 350 degrees. In a 9x13 pan layer potatoes, green beans, and chicken. In a saucepan melt the margarine. Gradually add flour, salt, pepper, and dry mustard. Add milk all at once and mix with a whisk to keep from clumping. Boil for 1 minute. Remove from heat and add mayonnaise. Pour over the potatoes, beans, and chicken. Cover and bake for 45 minutes. My family loves to add a little season-all to the top before they eat it.
